Summary

The successful candidate will be responsible for supervising kitchen staff, planning and preparing menus, maintaining food quality and presentation, managing ingredient usage and food costs, and ensuring strict compliance with food safety and hygiene standards.

We are seeking an experienced and highly organised Chef to oversee the daily operations of the hotel kitchen and ensure the consistent delivery of high-quality meals.

Key Responsibilities

  • Monitor food costs, ingredient usage, portion control, and wastage.
  • Monitor kitchen equipment and report maintenance or replacement needs.
  • Maintain strict food safety, hygiene, and sanitation standards.
  • Inspect the quality and freshness of ingredients before use.
  • Develop and maintain menus in line with hotel standards and guest expectations.
  • Ensure consistency in food quality, taste, portion size, and presentation.
  • Train kitchen staff on recipes, preparation methods, hygiene, and operational procedures.
  • Supervise, train, and coordinate cooks, kitchen assistants, and other kitchen staff.
  • Plan, prepare, and supervise the preparation of meals and menu items.
  • Address kitchen-related issues and ensure smooth coordination with the Hotel Manager and service team.
  • Oversee the daily operations of the kitchen.
  • Ensure the kitchen remains clean, organised, and safe.
  • Coordinate with the Storekeeper to maintain appropriate stock levels.
  • Ensure food is prepared and served within required service timelines.
  • Performance Expectations

  • Qualifications and Experience
  • Proven experience supervising kitchen staff and managing kitchen operations.
  • Demonstrable knowledge of menu planning, food costing, portion control, and inventory management.
  • Strong organisational, leadership, and problem-solving skills.
  • Ability to train and supervise kitchen personnel effectively.
  • 3–5 years’ experience working as a Chef, preferably in a hotel, restaurant, or similar hospitality environment.
  • Minimum of an OND/HND in Culinary Arts, Hospitality Management, Food Science, or a related field; relevant professional culinary training will also be considered.
  • Strong knowledge of Nigerian and continental cuisine.
  • Strong understanding of food safety, hygiene, and sanitation standards.
