Job Summary

The successful candidate should have strong leadership abilities, excellent customer service skills, good knowledge of restaurant operations, and the ability to manage a busy hospitality environment effectively.

The Restaurant Manager will be responsible for supervising restaurant staff, coordinating daily service, maintaining high standards of food quality and hygiene, managing guest relations, controlling restaurant costs and inventory, and ensuring smooth coordination between the restaurant, kitchen, bar, and other hotel departments.

We are seeking an experienced, customer-focused, and hands-on Restaurant Manager to oversee the daily operations of the hotel’s restaurant and ensure excellent food, beverage, and guest service standards.

Responsibilities

  • Restaurant Operations:
  • Ensure tables, dining areas, service stations, and restaurant facilities are clean and properly arranged.
  • Ensure all restaurant procedures comply with hotel standards.
  • Monitor service flow and ensure guests receive prompt and professional service.
  • Ensure the restaurant is properly prepared before opening and properly closed after service.
  • Oversee the daily operations of the hotel restaurant.
  • Coordinate restaurant activities with the kitchen, bar, Front Office, Housekeeping, and other departments.
  • Guest Service & Satisfaction:
  • Gather guest feedback and identify opportunities to improve restaurant service.
  • Welcome guests and ensure a pleasant dining experience.
  • Ensure special requests, dietary requirements, and VIP arrangements are properly communicated to the kitchen and service team.
  • Handle difficult guest situations professionally and escalate serious issues to the F&B Manager or General Manager.
  • Monitor guest satisfaction and respond promptly to requests and complaints.
  • Staff Supervision & Management:
  • Conduct pre-shift briefings and communicate daily operational priorities.
  • Monitor staff attendance, punctuality, grooming, and professional conduct.
  • Supervise waiters, hosts/hostesses, captains, cashiers, and other restaurant personnel.
  • Prepare or coordinate staff duty rosters and shift schedules.
  • Train and coach staff on customer service, menu knowledge, service techniques, and hotel procedures.
  • Promote teamwork and maintain a professional working environment.
  • Food & Beverage Service:
  • Ensure room service and other restaurant-related orders are properly coordinated where applicable.
  • Ensure food and beverages are served according to established hotel standards.
  • Ensure waiters have adequate knowledge of the menu and available beverages.
  • Coordinate with the kitchen to minimize delays, errors, and service complaints.
  • Monitor the presentation, temperature, portioning, and timing of meals.
  • Restaurant Sales & Revenue:
  • Monitor customer preferences and provide feedback to the F&B Manager.
  • Promote special menus, festive offers, private dining, and other approved promotions.
  • Identify opportunities to increase restaurant sales and guest patronage.
  • Support the promotion of restaurant products, menus, special offers, and dining packages.
  • Ensure all food and beverage orders are accurately recorded and billed.
  • Cash & POS Management:
  • Monitor cash, card, transfer, and other approved payment methods.
  • Ensure all restaurant transactions are properly entered into the POS system.
  • Monitor voids, discounts, complimentary items, refunds, and adjustments for proper authorization.
  • Ensure bills are accurate and presented to guests promptly.
  • Ensure restaurant cashiers follow approved cash-handling procedures.
  • Report discrepancies to the appropriate management personnel.
  • Inventory & Cost Control:
  • Coordinate with Stores and the F&B Manager regarding stock requirements.
  • Report stock shortages, damages, and unusual variances promptly.
  • Monitor restaurant supplies, tableware, beverages, condiments, and other operational items.
  • Conduct or participate in regular stock checks.
  • Monitor portion control and proper use of food and beverage items.
  • Minimize wastage, breakage, spillage, and unnecessary consumption.
  • Food Safety, Hygiene & Sanitation:
  • Monitor cleanliness of dining areas, service stations, equipment, and utensils.
  • Ensure staff maintain proper personal hygiene and grooming.
  • Report hygiene, pest-control, equipment, or sanitation concerns to the appropriate department.
  • Ensure restaurant operations comply with hotel food safety and hygiene standards.
  • Ensure food handling and service practices meet approved safety procedures.
  • Restaurant Facilities & Equipment:
  • Ensure restaurant furniture, equipment, lighting, air-conditioning, tableware, and service equipment are maintained properly.
  • Report damaged or faulty equipment to Engineering/Maintenance.
  • Monitor proper handling and storage of restaurant equipment and tableware.
  • Ensure the restaurant environment remains comfortable, clean, and presentable.
  • Events & Special Functions:
  • Support the planning and execution of weddings, conferences, meetings, parties, banquets, and other hotel events.
  • Coordinate restaurant staff for special functions and group dining.

  • Liaise with Finance on billing, cash reconciliation, and financial controls.
  • Work closely with the Kitchen to ensure efficient food production and service.
  • Coordinate with the Bar team regarding beverage service and guest orders.
  • Coordinate with Sales & Marketing on restaurant promotions and events.
  • Coordinate with Procurement and Stores regarding supplies and inventory.
  • Strong knowledge of restaurant and hotel Food & Beverage operations.
  • Reliable and punctual.
  • Good knowledge of POS systems and restaurant billing procedures.
  • Bachelor’s Degree or HND in Hospitality Management, Hotel Management, Catering, Food & Beverage Management, Business Administration, or a related field.
